treat of the week: sugar cookie cake bars

Hello lovelies! 
I've got a fun and easy recipe for you today: sugar cookie cake bars!
For those who don't know, sugar cookies are basically light and fluffy biscuits, kind of like shortbread but softer. They are an american treat and often found beautifully and brightly frosted and decorated. I love making them but often just don't have the time to make a good enough batch, so I thought I'd share with you a little trick for making and decorating a batch in one go. These are also free of dairy, an added bonus!
You will need:-
1/2 cup butter, softened [I used Pure Soya spread for this one]
1 cup granulated sugar
2 eggs
1 Tbsp soy cream [Alpro is particularly good]
1 tsp vanilla extract
2 1/2 cups  flour
1/2 tsp baking powder
pinch of salt
The base is very easy to make, combine the butter and sugar until creamy and fluffy, add the egg and vanilla, then the cream and then add the dry ingredients. You will then need to butter a baking tray and spread in the dough, which will be quite thick by this point. Pat it down with your fingers so it fills the whole of the tray. Bake for 10-15 until the edges are turning golden brown.
Once the edges are turning, take it out of the oven and pop it on the side to completely cool. Use a palette knife to slide your big slab of cookie out of the tray, so it will cool faster. Next is my favourite part, the icing! 
Buttercream icing is a bit still a bit of a trial and error for me so I don't have an exact recipe, but basically, you need about 2 tbsps almond milk, and 2 tbsps very soft soy butter, and cream them together with icing sugar until you get the desired consistency. Add a few drops of food colouring, and when you think your buttercream is well mixed, mix it again some more. The more mixed it is, the creamier the consistency, and the better the icing!
Once your cookie slab is completely cool, spread the icing all over, reaching right to the edges with a palette knife or spatula.
Then, sprinkle a handful of sprinkles evenly over the slab, and cut into squares. Et voila! Individual cookie bars, without having to make and decorate individual cookies! Try not to eat them all at once...
